Swedish Waffles | Honey Cake
Prepare and preheat waffle iron. Mix all ingredients until the mixture takes on a slightly fluffy appearance. Pour the batter into a hot waffle iron and bake until done (about 3 minutes). In Sweden, it is traditional to use preserves or honey to top the waffles.
Preheat oven to 350 degrees F. Grease and flower a 9x13 baking pan. Combine all ingredients well, pour into the pan, and bake for 45 minutes. This cake is traditionally served unfrosted, but you can make a frosting with:
• 2 cups confectioners' sugar
• 1 tablespoon milk
• 1 1/4 cups unsweetened orange juice
Mix together, and drizzle on top of cake.
